Cilantro Lime Greek Yogurt Sauce

This zesty, fresh sauce was created to pair with our Black Bean and Sweet Potato Quesadilla, balancing a tangy and lightly sweet sauce that goes great with the smokiness of the gouda in the quesadillas. However this sauce is a great one add to lamb burgers, bowls, and more! If you like cilantro this is for you!

Ingredients

  • Greek Yogurt
  • Cilantro
  • Lime Juice
  • Olive Oil
  • Agave Syrup

Cilantro Lime Greek Yogurt Sauce

  • 1 Cup Greek Yogurt
  • 1/4 Cup Diced Cilantro Leaves
  • 1 Tablespoon Olive Oil
  • 2 Tablespoons Agave Syrup
  • 1/4 Teaspoon Salt
  • Juice of 1 Lime

Assembling the Sauce

  • Combine greek yogurt , diced cilantro leaves, olive oil, agave syrup, salt, and lime juice in a medium size mixing bowl.
  • Mix well to incorporate all ingredients; this may take 1-2 minutes for the olive oil to full mix in.
  • Taste the sauce, and adjust as needed. Some may find they want to add additional salt to mellow of the sweetness a bit.

Tips and Recommendations

  • If you enjoy cilantro and want a smoother sauce I recommend rough dicing the cilantro, including the stems. Add the cilantro and all other ingredients to a blender and blend until smooth. This will make the dip both smoother, and add additional cilantro flavor.
  • To increase the cilantro flavor you can add additional cilantro to either preparation method.
  • This sauce pairs very nicely with pickled red onions.
